Vegan lifestyle goes beyond not eating meat and eating only veggies.  Vegans do not eat anything with animal products.  This includes milk, dairy, eggs, stock – anything that exploits the use of animals.  At first I thought, “So that leaves honey and vegetables.”  Not true.  It is easier than I thought to make a delicious meal using only vegetable products.  Check out this meal I made at home: I made the broth from left over vegetable peelings and scraps from dinners (I know, I am weird BUT this is the BEST veggie stock ever!)

Ingredients:

  • Extra Firm Tof
  • 1 cup Homemade Veggie Stock
  • seasonings of your choice

Method:  take tofu out and pat it with your seasonings.  Be careful though.  Tofu is quick to take on any flavors it is mixed with.  Add veggie broth to pan and simmer.  Flip tofu a few times.

I finished the plates with “Rice Select” Couscous from Costco and fresh baby Asparagus (also steamed in the veggie broth)

  • 1 cup uncooked Couscous
  • 1 cup water
  • 1/4 teaspoon salt (optional)
  • then I threw in a 1/2 cup Sun Dried tomato (also from Costco)

I really found this recipe to be super yummy and super quick since I all I had to do is take the tofu out of the package, season and simmer.  We had dinner in about 10 minutes!
